Resep Pempek Dos

I created this version of pempek when I was living abroad where fish was much more expensive than it is in Indonesia. The result was a snack flavorful enough to keep my homesickness at bay.

Serve 16 Pieces

Ingredients

Pempek Dough
1 ¾ glass of seafood broth
250 gr flour, sifted
4 medium sized chicken eggs
500 gr sago flour, sifted
½ tsp salt
Sugar

Filling
8 eggs
½ tsp garlic salt
¼ tsp ground pepper

Cuko Sauce
3½-4 glasses of water
Spice Paste for Cuko
12 garlic cloves
8 red curly chilies
5 red bird’s eye chilies
4 tsp dried shrimp, soaked in warm water
1 block of palm sugar
3 tbsp tamarind
½ tsp salt

Steps
1. Pempek: Bring the seafood broth to boil with salt and sugar. Sprinkle in flour while stirring constantly until the mixture thickens and no lumps remain. Remove from heat. Stir until the mixture cools. Add eggs one by one while mixing at low/medium-speed with mixer. Sprinkle in sago flour while mixing. Do this until the dough is smooth and soft.
2. Shape the dough into balls the size of either golf or tennis balls. Hold in palm, curling fingers around ball shape and pressing in with thumb until the ball looks like a bowl. Fill the hollow of the bowl shape with whisked eggs and seal back into a closed ball shape.
3. Put the ball or pempek dos into boiling water. Let it balls surface and cook for 20mins until the ball is chewy and the egg filling cooked. Remove from heat. Drain water.
4. Cuko: Bring water to boil with spice paste. Lower the heat and let the cuko sauce cook down and thicken. Taste the sauce and strain it.
5. Serving: Fry or steam the pempek dos. Serve with cuko sauce and chopped cucumber. It is also can be served with yellow or angel-hair noodles.

Bahan

Pempek
1 ¾ gelas air kaldu seafood
250 gram tepung terigu, ayak
4 butir telur ayam ukuran sedang
500 gram tepung sagu, ayak
Garam
Gula pasir

Isi: Kocok Rata
8 butir telur ayam
½ sendok teh garlic salt
¼ sendok teh merica bubuk

Ulek Halus
12 siung bawang putih
8 butir cabai merah keriting
5 butir cabai rawit merah
4 sendok teh ebi kering, rendam dalam air hangat
1 blok gula jawa
3 sendok makan asam jawa
Garam

Cuko
3½ - 4 gelas air

Caranya
1. Pempek: Didihkan kaldu bersama air, garam,dan gula pasir. Masukkan tepung terigu sedikit demi sedikit sambil diaduk hingga rata dan tidak berbindil. Angkat. Aduk-aduk agar agak dingin. Masukkan telur satu per satu sambil kocok dengan mixer kecepatan lambat – sedang. Masukkan sagu sedikit demi sedikit sambil aduk hingga adonan kalis dan tidak lengket.
2. Bentuk adonan sebesar bola golf atau bola tenis. Letakkan di atas telapak tangan. Tekan bagian tengah bola adonan dengan ibu jari sementara jari-jari yang lainnya menekan-nekan sisi adonan sehingga menyerupai mangkuk. Isi mangkuk ini dengan kocokan telur lalu rapatkan.
3. Masukkan pempek dos ke dalam air mendidih, biarkan hingga terapung, masak selama 20 menit hingga adonan kenyal dan telur matang. Angkat. Tiriskan.
4. Cuko: Didihkan air bersama bumbu halus. Kecilkan api dan biarkan cuko masak dan mengental, cicipi rasanya. Saring.
5. Penyajian: Goreng pempek dos atau kukus. Sajikan dengan cuko, mentimun cincang. Jika suka dapat disajikan dengan mi kuning atau bihun rebus.
